Burglars clean out Lutticken's cash registers

Not to criticize Lutticken's, but I always thought businesses cleared out all their cash for the night. When I ran a cash register we had to deposit all money in the safe or the bank, except for enough to make change the next day - about $50, which isn't worth burgling. If I were a burglar I'd assume the register was mostly empty. Perhaps these ones knew the business?
